Restaurant style jeera rice at home

Today I’m going to share a very simple recipe of jeera rice.There are many ways to prepare it. Usually every now and then, this is prepared often in our homes just to use the left over rice or to save time. But during this lockdown I really just wanted to try it in the way it is made in restaurants. As we could not step outside or go to any restaurants, I just wanted to make sure my family enjoys good food at home only. And in my quest to do so I learned to prepare many new delicacies that also in the same way it is served in the restaurants.

I also learned that these home made delicacies are a healthier version of what we get from restaurants. So why not prepare it at home and let out family enjoy a healthy meal.

Here, in this recipe we are going to cook rice with dry whole spices first and then add the tempering to the prepared rice. So without wasting any time, let us move on to our recipe.

To prepare rice we need-
1.5 cups of basmati rice
Dry whole spices- star anise, bay leaf, 2 strands of mace, 1″cinnamon stick, 2green cardamoms, 2 cloves, few peppercorns
Chopped cilantro leaves
1.5 tablespoons of ghee or oil of your choice

How to prepare rice-
1.Wash and soak the rice for 20 minutes.
2.Then drain the water and transfer it ti bowl.
3. Now to firm up the rice, air dry it for at least 10 minutes after soaking.
4.Now place s cooker on stove, keep the flame low, add ghee and the dry whole spices.
5.Let them sizzle for a few seconds, saute nicely, till they become fragrant.
6.Now add the soaked and drained rice.
7.Stir it with a wooden spatula, so that the rice should not break while you stir. Stirring at this stage plays an important role because if each grain of rice is not coated well with ghee or oil then after cooking it will turn mushy.
8.Now add water. As we have taken 1.5 cups of water, we are supposed to add 2.5 cups of water.
9.Add salt to taste, the presence of salt in water should be on higher side.
10. Mix everything well.
11.Now close the lid and turn up the flame to the maximum and wait for the first whistle.
12. After one whistle turn off the flame and wait for the pressure to release naturally.
13.When you open the lid, you will find our rice is nicely done, now don’t let it sit in the cooker, transfer it into a wide bowl and let it cool down.

Ingredients required for tempering-
1tbsp shahi jeera (cumin)
2dried red chillies
1tbsp ghee or oil

1.Heat a wok, add ghee, dried red chillies and shahi jeera(cumin).
2.Now let them sizzle.
3.Saute it nicely till the jeera turns brown and fragrant.
4.Now add the tempering to the prepared rice
5.Now mix it nicely
6.Then transfer it to a serving bowl and garnish it with cilantro leaves
7.Our restaurant style jeera rice is ready to serve.
